Beef roulades like Grandma’s
How it’s done.
- 01
Prepare the beef.
Pound the beef, make small cuts in the edges and season with salt and pepper. Spread generously with tarragon mustard.
- 02
Fill and roll.
Add strips of carrot, pickle and bacon. Roll tightly and secure with toothpicks.
- 03
Sear the roulades.
Coat the roulades in a little flour and sear in hot oil. Remove from the pot.
- 04
Make the sauce.
Brown the chopped onion with butter in the same pot. Stir in one tablespoon of flour and deglaze with beef stock and a splash of red wine.
- 05
Time to braise.
Return the roulades to the sauce and add chopped capers. Braise gently for about one and a half hours, until tender.
- 06
Add the finishing touch.
Finish the sauce with one tablespoon of crème fraîche. Remove the toothpicks before serving.
Happy cooking & enjoy!Birgit
